Green Lentil Hummus

Hummus is one of my favorite snacks that I can enjoy anytime of the day. I either eat it with the spoon or dip my veggies in it. I found this recipe and it had the green lentils which I always keep in my pantry to make either the soup or the salad. So please enjoy this recipe as an alternative to your regular chickpea hummus.

Green Lentil Hummus

Ingredients:

3 cups vegetable or organic chicken stock/broth
1 cup green lentils
1 bay leaf
3 garlic cloves, chopped
1/2 cup tahini
Juice of one lemon
1/2 tsp cumin
1/2 tsp paprika
Sea salt to taste
Vegetable and apple slices for dipping

Directions:

In a medium saucepan, combine chicken stock, green lentils, and bay leaf. Bring to a boil and then cover and simmer until lentils are tender, roughly 40 minutes. Then boil uncovered until most of the liquid is gone. Remove the bay leaf and set aside to cool. When it’s cooled off, transfer to food processor and blend with garlic, tahini, and lemon juice until smooth, adding sea salt and other spices (cumin and paprika) to taste. Serve warm or at room temperature with the vegetables, or you can store in the fridge to use as needed throughout the week.

Mango Coconut Chia Pudding

Ok, I have to admit, I love desserts and anything sweet, you name it! But at the same time I know I have to watch what I eat for my own good health. When I tried this recipe, I literally fell in love with it. Once again, all of my favorite ingredients are in a recipe. It is a healthy form of pudding that you can enjoy any time of the day. Chia is an excellent source of omega fatty acids and full of minerals, fiber and  vitamins.

Ingredients:

1/2 cup lite coconut milk
1/2 cup unsweetened almond milk
3/4 cup fresh ripe champagne mango, diced
2 tbsp chia seeds
1 tbsp sweetened shredded coconut
4-6 drops liquid stevia  (or honey to taste)

Mix everything in a large container and close the container. Refrigerate  overnight or 5-6 hours.
Enjoy!

Kale Guacamole

I am huge fan of avocado and in one of my recent posts I gave a guacamole recipe that I always make at home for myself or for my friends. The other day I came across with this recipe in which two of my favorite ingredients are being used,Kale and Avocado! They both make wonders and if you combine two in a recipe I am sure you'll be in heaven:) This is a dairy, sugar and gluten free recipe and just enjoy it with your favorite veggie sticks or favorite crackers. I know I feel guilty when I do it but you need a glass of red wine and assortments of your favorite cheeses while you are scooping your lettuce into this green miracle food, too!!!

Here is the recipe..

1 Avocado
4-5 stalks of kale
Juice of half a lemon (my favorite is Meyer lemon)
Juice of half a lime
Handful of fresh cilantro
3/4 cup water (optional)
1 garlic clove (minced)
Salt and Cayenne pepper to taste
1 small tomato
1/4 red onion

In a blender combine avocado, kale, cilantro and juices from the lemon and lime. Start blending and slowly add water until combined. You can leave it a little bit chunky or creamy. You don't need to use all the water in the recipe, just use it to loosen it up until it reaches the desired consistency. remove it from the blender and mix in spices and garlic. And Enjoy as Always;))

I came across this  recipe on the internet the other day and gave it a try. It is not going to replace my sweet potato fries that I usually make for my family but definetely will be an alternative. You'll love it!
